    If you are planning on making green beans from a can just stop right there, they have no flavor! This is a good, fast and easy recipe for green beans which makes a great companion for that chicken dish. The pine nuts really give it that special flare!

    Ingredients:

    • 3/4 Of a pound of green beans, trimmed and cut diagonally into 1/2-inch pieces
    • 1/8 Cup pine nuts, toasted
    • 1 Tablespoon finely chopped fresh flat-leaf parsley
    • 3/4 Teaspoon finely grated fresh lemon zest
    • 2 Teaspoons extra-virgin olive oil

    Directions:

    • Cook beans in enough salted water to cover until just tender, about 5 minutes.
    • Drain well in a colander.
    • Transfer to a bowl and toss with nuts, parsley, zest, oil, and salt and pepper to taste. Easy, huh?

    Recommendations:
    As the main dish, we recommend the artichoke chicken accompanied with the caponata.
